DAY 23 AT EDWIN SHAW
Well, I drug myself to cooking class. We did poultry. I cooked duck with cherry brandy sauce. I tried a tiny piece. Something about duck reminds me of Daffy and I just can't bring myself to do it. It was just like dark chicken meat. I learned how to make crepes. We used those to put around some poached chicken. Chef asked me if I had ever baked a turkey before. "You've baked a turkey right?" "Um, no." "Not even for Thanksgiving or anything?" "Um, no. But it can't be that hard!" YEAH, it wasn't except for when he pulled the giblets out of its ass! You know, all I can think of when I see that crap is, "Clark, be sure and save the neck for me!" "Okay Eddie." Who eats those anyway!? I used rubber gloves and padded it with oil, worchester sauce, salt and pepper. We had two turkeys. I also made sweet potatoes, which when prepared properly with gobs of butter and brown sugar, are food for kings. It reminded me of that AWESOME dish Aunt Sharon makes for the holidays...mmm, with crumbled walnuts or something on top and lots of brown sugar and stuff.
Chef Alford also showed us how to cut a chicken. Okay, that was just sick. I made it almost all the way through watching. Then he got to the point where he was "dislocating joints" and breaking things--it was just too much. In lieu of spewing, or passing out in the back of the kitchen, I went up front and got a glass of ice water. I actually felt the blackness closing in because I kept thinking about it more and made myself even more squeamish. Gross, I'll leave the butchering up to Grandma and Purdue.
However, I enjoy eating it. Messing with it post-cooking isn't bad either. My favorite thing we ate tonight was chicken tenders and Chicken Kiev. It is chicken breasts filleted and then packed with butter mixed with garlic and chives. Yum. I love garlic. Onions are my favorite veggie. I like all the veggies that stink. Figures. There was some homemade barbecue sauce from last week. Don't ask me how they made that, cause I wasn't there. I made some years ago though. I also got to learn how to thicken my cherry brandy sauce using a slurry of corn starch. Doesn't take much. All-in-all, we had about 5 chicken dishes, 3 duck dishes, sweet potatoes, and mixed vegetables to eat tonight. Geez, do I make you jealous?
Mike was in great spirits tonight Mom said. He ate like a horse. He is now cleared to eat any foods--they don't have to be chopped.
He will be getting his stomach tube out soon. His speech therapist told him today (at his request) that it feels a bit like being kicked in the stomach. Hopefully it will be quick.
Seeing how he is able to eat whatever, I'm gonna bring him in some leftovers from my cooking tonight (chicken tenders and sweet potato). Next week we're doing seafood. I don't like eating things that swim, Mike does. I'm gonna bring him some popcorn shrimp or something.
Mike is also more receptive to letting us work his legs through stretches in the evening, to speed along his daytime therapy. Aunt Sharon worked with him tonight. He did well, but his muscles are very tight.
He also got a very nice Mustang puzzle tonight I guess, thank you!
Well, I am trying to get to bed earlier and be healthier. I stopped at the rec center after class tonight. I did some light cardio and some strength training--something I haven't done since I left Wooster and softball. It was nice. I will talk to you all tomorrow.
